Fried Green Tomatoes Recipe

One of the perks of summer is frying up a skillet of fried green tomatoes. If you grow your own tomatoes and haven't tried them fried, you should. Yummy.

(makes two skillets)

5-6 medium fresh green tomatoes
2 eggs, beaten in a bowl
3/4 - 1 cup flour on a plate
3 tablespoons butter (each skillet)
Dash of thai hot pepper flakes (Optional)

Cut green tomatoes into 1/3-inch slices. Dip tomato slices into the egg then lightly flip the tomato slices in the flour. Heat butter in a large skillet over medium low heat. We add a dash of thai hot pepper flakes to give the tomatoes an extra kick, but that’s optional. Fry tomato slices in a single layer until golden brown on each side. Check the tomatoes by poking them with a fork. They should be tender, not hard like a fresh green tomato off the vine.

For best flavor let them cool for 5 minutes before eating. Yummy!!!
