every year i have to make chex mix, santas whiskers, wassail and stollen
what do your families HAVE to have for the holidays? :D

lots and lots of coffee and homemade cranberry & pistachio biscotti...and cranberry lemon bars....and a million other cookies. :blink:

of course i do...but I'll have to post the recipe when i get home this evening. :D You've got a kitchen-aid stand mixer or something like it right? I once tried making a batch with my BF's mothers hand mixer.... -_- there was smoke involved.

Smoke you say? That's when my family knows that dinner is ready. :lol: :lol: But my peeps have to have stuffed jalapenos, magic cookie bars and sweet potato pie. Oh and those cheesy sausage ball you make with bisquick.

I always have to make Cherry Balls which are made from plain shortbread dough rolled around a whole candied cherry - mmm good.

Lemon cream cheese pudding, no-bake peanut-butter/cornflake cookies, cornbread dressing, and pecan pie.

Cranberry & Pistachio Biscotti

1 1/2 cups pistachios
1 tsp baking powder
2 1/2 cups all-puurpose flour
1 cup sugar
1/8 tsp salt
3 large eggs
2 large egg yolks
1 tsp pure vanilla extract
1 cup dried cranberries
zest of 1 large lemon

Heat oven to 350?. Finely chop half the pistachios, and leave remaining ones whole; set aside.

In an electric mixer fitted with the paddle attachment, combine baking powder, flour, sugar, and salt. In a bowl, beat eggs, yolks, and vanilla. Add to dry ingredients; mix on medium low until sticky dough is formed. Stir in pistachios, cranberries, and zest.

Turn dough out onto well-floured board; sprinkle with flour, and knead slightly. Shape into 9-by-3 1/2-inch logs. Transfer to prepared baking sheet. Bake until golden brown, 25 to 30 minutes. Let cool enough to handle, about 10 minutes. Reduce oven to 200?.

On cutting board, cut about 1/2-inch-thick slices. Return pieces crust side down to baking sheet. Bake until slightly dry, about 20 minutes. Cool on wire rack. Store in airtight container.

*** don't use those baking sheets with a layer of air between the top and bottom the biscotti will take longer to get dry and crispy. :blink:

Oooo yummy! They all sound good! Can't wait for that biscotti recipe (can you use a food processor for them terese?)and gardenlady could you post the santa whiskers recipe too? I like trying one new thing every year. I usually just make about 6 different kinds of cookies or some fudge.

I've never tried making them in a food processor...so your guess is as good as mine.

These are another favorite for the Holidays

Coconut Cranberry Chews

1 ? cups butter
2 cups sugar
1tbs grated orange zest
2 tsp vanilla
1 large egg
3 ? cups all purpose flour
1tsp baking powder
? tsp salt
1 ? cups dried cranberries
1 ? cups sweet dry coconut flakes

Heat oven to 350?. Line baking sheets with parchment paper and set aside.

In large bowl with mixer on medium, cream butter, sugar, orange zest and vanilla extract together. Add egg; mix on high to combine.

Sift together four, baking power and salt, add to butter mixture. Beat on low until mixture comes together. About 5 minutes.

Mix in cranberries and coconut. Shape into 1 inch balls and place 2 inches apart on parchment paper. Bake until edges begin to brown, 11-15 minutes.
