I'm looking for different ways to make butternut squash. I usually just cut it up, boil and mash it and add some butter and brown sugar. Anyone have something different they'd like to share?

mmmm, butternut squash :wub:
i guess it's not much different from what you do, ginny,
but i usually just serve it baked in the half-shell,
same ingredients, :unsure: different technique.
cut in half, long-ways, and clean out the seeds,
place cut-side down in about a 1/4 inch of water,
(poke a few fork holes thru the skin, to let vent)
bake at 325 'til they feel soft (time depends on size),
then invert them and put some butter and brown sugar :P into each one,

* sometimes, i put canned pineapple into the center hollow, after turning them over,
and put them under the broiler just long enough to brown slightly :blink:

Oh Jeesh - butternut squash, butter and brown sugar. Slobber drool slurp slurp!! I'm going to cut some up right now.
I usually do as decompost does except I just cut off a couple of good slices, bake at 350 until they're soft and then add butter and brown sugar to the top. Isn't it funny how all 3 of us do almost the same thing!
I've heard butternut is the best squash to use in squash soup too. Sometimes I cut little cubes of it up to add to my stir-fry wok dishes and sometimes to stews.

I use it in a lot of recipes that call for punpkin....cookies, pies, etc. yummy

there is a great recipe using quinoa..
stuff the squash with prepared quinoa, raisins, or dried cranberries (or both) your favorite nuts, pecans are nice with this....chop everything coarsely and mix with enough butter to moisten. you can add some nutmeg and a little sea salt.
bake till tender.

:blink: :P MMMMMMM I use butternut squash like I do sweet taters. With the whole works, butter, brown sugar,syrup owwwww doesn`t get any better huh? I even bake them and use them like a baked tater, with butter salt and pepper on. Sometimes rebakin them, by addin a bit of cheese. Or just butter, salt and pepper and sour cream! Oh my now look what I`ve gone and done, made myself hungry, and I am still on my diet. Lost 52 lbs. to date just about done and down to where I want ot be. But oh boy this all sounds sooooo good!!!! :P

Butternut Pumpkin Lasagna
1 lb white cheese (any kind really)
1 box lasagna noodles, cooked
3-4 butternut pumpkins/aka squash/ peel, slice ? - ? inch thick , brush with olive oil and place on oiled pan to roast in oven until soft with crispy edges (this is so good not all of it will make it into the lasagna)
mix 1/3 cup pine nuts with
lg container fat free cottage cheese
? cup basil
pepper
1 cup soy or skim grated mozzarella cheese
in lasagna pan layer noodle, cottage cheese mix, pumpkin, noodle, thin slices of cheese, noodle pumpkin noodle and cheese on top. Bake 20-25 min 350* oven let cool and cut in squares to serve.
