Hi guys

I'm interested in hearing any of your favorite pumpkin recipes. :D

I'll start with one of my fvorites.

Pumpkin Roll

Roll Batter:
3 eggs
1 cup sugar
2/3 cup pumpkin puree/canned pumpkin
1 teaspoon lemon juice
3/4 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 1/2 teaspoons cinnamon

Filling:
1 cup powdered sugar
8 ounces cream cheese (room temperature)
4 tablespoons butter or margarine
1/2 teaspoon vanilla

Mix pumpkin batter ingredients as listed. Line 1 1/2" by 15" cookie sheet with waxed paper. Spread batter evenly onto a cookie sheet. Bake 15 minutes at 375 degrees.

Prepare linen towel heavily sprinkled with powdered sugar. After baking, flip onto towel, waxed paper side up. Remove paper, sprinkle with powdered sugar, and roll into towel. Cool 30-40 minutes rolled. Prepare cream cheese filling while the pumpkin roll cools. After roll has cooled, unroll and spread filling evenly and roll again. Chill for several hours and then slice for serving. :wub: :wub:

I was looking for recipes for pumpkin the other day as they are really cheap this time of year, and found a site called <span style='color:purple'>sorry no commercial links please</span> that has all kinds of pumpkin recipes. Im making the pumpkin fudge tonight. :D :D :D

i've got some good ones

double layer pumpkin cheesecake

INGREDIENTS:
2 (8 ounce) packages cream cheese, softened
1/2 cup white sugar
1/2 teaspoon vanilla extract
2 eggs
1/2 cup pumpkin puree
1/2 teaspoon ground cinnamon
1 pinch ground cloves
1 pinch ground nutmeg
1 (9 inch) prepared graham cracker crust
1/2 cup frozen whipped topping, thawed

DIRECTIONS:
Preheat oven to 325 degrees F (165 degrees C).
In a large bowl, combine cream cheese, sugar and vanilla. Beat until smooth. Blend in eggs one at a time. Remove 1 cup of batter and spread into bottom of crust; set aside.
Add pumpkin, cinnamon, cloves and nutmeg to the remaining batter and stir gently until well blended. Carefully spread over the batter in the crust.
Bake in preheated oven for 35 to 40 minutes, or until center is almost set. Allow to cool, then refrigerate for 3 hours or overnight. Cover with whipped topping before serving.


Roasted Pumpkins

INGREDIENTS:
4 small sugar pumpkins, seeded
2 cups applesauce
1/2 teaspoon ground cinnamon
salt and pepper to taste

DIRECTIONS:
Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking dish.
In a small bowl, mix applesauce, cinnamon, salt, and pepper. Spoon 1/2 cup mixture into each pumpkin.
Place pumpkins in the prepared baking dish. Cover with foil, and bake in the preheated oven 1 hour and 45 minutes, or until pumpkins are tender.

DW makes shedloads of pumpkin soup. :o

She thinks it's great so does DD, so the freezer is full of it. If anyone is interested in the recipe I'll get her to type it in.

hmm, that sounds interesting. It's not sweet is it? <_<

I would love to try the recipe if she has time. :wub: I'm a big soup eater :D

Oooo pumkin soup! I haven't had that in ages! My grandmother used to make it all the time. I've got to ask her how she made it, wasn't sweet at all and has a very different flavor than anything I've ever tasted before, a little on the creamy side. ;)
