I spent a pungent morning turning 3 huge cabbages into different recipes.

First I used all the big outer leaves for cabbage rolls, a huge turkey roaster full of 46 large cabbage rolls in tomato sauce.

I was left with 3 "shrunken" cabbages with too small of leaves for rolls.

2nd I took 2 of the shrunken cabbages and chopped them up coarsly and boiled them in a little water and spices until they were soft. Then I took the hand-held blender and reduced it all to mushy soup and froze it in smaller containers. I'll use this as a flavourful soup base for soups in the winter.

3rd I took the last shrunken cabbage and cut it into large wedges, put them in some tomato sauce in a casserole dish and covered it all with sliced white cheese. This I froze and will use it as a side dish veg sometime in the future.

My whole house smells pretty much like cabbage right now and I'm going to get out the sour cream and have a nice plateful of cabbage rolls. Mmmm - they're like candy to me.

I made cabbage rolls for company last week, and they were so good! They are like candy, aren't they? Yummy! I dont' mind the house smelling like cabbage either.

but with only two of us in the house, :unsure: and very limited freezer space, i never make them anymore,
'cause the only way i know how to make them (learned at my croatian grandma's knee) produces about a ba-zillion ^_^

so, for years i did without, :( until i discovered a recipe for un-stuffed cabbage soup :blink:,
which is so quick and easy, it's become a real cold weather favorite in our house.

hey, I love cabbage! :D
being a vegetarian I have a fav cabbage dish with curry powder..mmhhh.
onions and cabbage in a pan with olive oil, well fired, then spiced up with salt, soy sauce mucho curry powder and sweet chilli sauce.
And then you can put tagliatelle (pasta) into the whole thingy.....yummeh!
Or for meat loving peeps you can put it on fried minced meat and smashed potatoes.. in layers, like lasagne..mhhmmm...gosh, I need som'th' to eat now :mellow:

Oh Nettle - both those sound yummy! I'll have to try them when the cabbage rolls are all gone and I'm ready to cook another cabbage.

My ex-FIL used to make cabbage rolls every year at Christmas. Unfortunately I never got his recipe (if he even had one) and he's gone now. Anyone care to share their recipe? Decompost - care to share that soup recipe?

sure bj, the soup is so simple, :rolleyes:

un-stuffed cabbage soup

1 tbs veg oil
1 lb lean ground beef
1 sm-med cabbage (cut coarse)
1 lg onion (cut coarse)
1/4 cup dried chopped onion
1 28 oz can of plum tomatoes w/basil
1 10 oz can beef consumme
1 10 oz can french onion soup
10 oz of water
1 tbs lemon juice
1/2 cup uncooked inst. rice
salt & pepper

brown the ground beef in the veg oil, adding the fresh and dried onions. drain and set aside.

in stock pot (or crock pot) mix the tomatoes (coarsely cut), and the soups and water with the cabbage and lemon juice.
heat 'til the cabbage wilts, then add the browned beef mixture.
cover and simmer for 45 min.

20 min. prior to serving, add the rice and stir.
add more water if necessary. salt and pepper to taste.
