I made some today and its sooooooo good! :wub:
oh, I GUESS I'll share the secret recipie....
Plum Oatmeal Bread
4 cups flour
1 1/3 cup packed brown sugar
2 tablespoons baking powder
2 teaspoons cinnamon
2 teaspoons salt
2 cups quick-cooking oats
1 30 oz can purple plums, packed in heavy syrup, drain, reserve juice, remove pits and chop plums.
2 eggs beaten
1/2 cup vegetable oil
combine flour, sugar, baking powder, cinnamon, salt and oats in a large mixing bowl. Stir in chopped plums to coat well. Add enough water to the plum juice to make 1 1/2 cups liquid. Combine plum juice, eggs, and oil. Add to flour mixture, stirring untill dry ingreadeients are moist. Pour into two greesed loaf pans. Bake at 350 degrees for 60-70 minutes, cool 10 minutes, remove from pans and cool on wirte rack.

Wow that DOES sound good. I wonder what other preserves you could use in place of the canned plums. Peaches or pears maybe?

maybe appricots??? pears might be too soft...cherries would be good too! Especially some of the rum cherries I used to make and can B) I miss my 3 cherry trees but not all the pitting LOL

The second batch is almost ready to come outta the oven :P I dont have a lot of days where I have time to bake, so I like to do a lot when I do have time. I also cleaned and organized the pantry and kitchen, planted bulbs, cut down /mowed down all the corn stalks, mulched the bare beds (to help keep the pooches frm getting all muddy) and losts more today, whew!

Sounds darn good!
BUT, I hate baking --- or maybe it's - baking hates ME! I'm never successful with it. I either undercook or overcook - or something goes wrong. I don't mind cooking, because you can create your own amounts of seasonings and mix whatever ingredients that you want.......Baking is precision with measurements.
Baking is too strict for me, I guess. GAWD what a lame excuse! ^_^

Some people have the "touch" for baking and some don't. I'm an OK baker but my daughter is much better. From the very first batch of cookies she made as a little girl she's been able to bake anything she sets her mind to.
You should taste her White Chocolate/Raspberry/Truffle/Trifle!! It's something she makes for us at Christmas, she does it all from scratch too. She makes it in this giant clear glass bowl and it looks as good as it tastes.

Thanks for posting the recipie! I copied it down and going to try to do this soon!!! ( come on now, I'm a guy and not very well doing this stuff ( I'm not Emeril or any other cheff for that matter )! But this sounded good enough to try! :lol:

I think your plum bread would make great Christmas gifts! ;) I always make baskets of goodies for the neighbors and that sounds like a good one to add this year! :D Thanks for sharing! :D
