Ok, anyone have ever tried making stuffed pepers then freezing them (before cooking them) for meals during the winter? Just trying to figure out what to do with all my over abundence of bell peppers.

Personally, I'd stuff'em and cook'em - then freeze'em. You can heat them up in the oven or microwave later on. :D

I've frozen a lot of them. I bake them first like Dandy said. Also I've just cut the green peppers in half and cleaned them good, dried them off and stacked them in a freezer bag. I take out the halves I need and make half stuffed peppers whenever I want. It takes up less space in the freezer that way.

You must be psychic - that's exactly what I'm doing tomorrow. Stuffing 10 huge peppers and freezing them. I think I'll cook them first too but my cookbook says you can freeze them uncooked if you want. Then you just thaw them and cook them as usual, if they're already cooked you just have to heat them through.
First I put them in boiling water for about 2 minutes to par-cook them before stuffing.

I think DandyLioness gave you a good post! Personally, I'm not a big fan of stuffed peppers, I mean, I have and will eat them ,so I don't hate them!
I've seen them prepared and then frozen, but I like what DandyLioness posted about cooking them ,then freeze them -- you can always reheat them at a later date!
