Ok...I cant possibly eat em all. My 6 plants have decided to produce a huge heavy last crop. I have about 35 mature bells right now and I am the only one who eats them in my house (besides sasha the dog) can I freeze em? <_<

Why not? That was my original plan --- to grow a mix of vegies and chop them up and make my very own "Frozen Mixed Vegie Thingie"! :P
I'm sure that your bells would do beautifully in the freezer!

I chopped and froze peppers last year and they were wonderful. I'd just take out a couple of handfuls of frozen peppers and throw them in the wok or in whatever else I was cooking. Good stuff!

:) oooh yeah, like mary, i love fresh frozen peppers :P
i just cut them in strips, or chop them, and lay them out in a single layer on a cookie sheet,
throw them into the freezer just long enough to freeze 'em,
and then zip them into a plastic bag. mmmm, mmmm, yummy-good!
i do the same thing with the big sweet onions (walla wallas or vidalias) that are not available here in the wintertime.
i love dandy's idea of mixed veg too, never premixed them before, hmmmm :rolleyes:

My neighbor makes Green Pepper Jelly. It is great with Creamed Cheese and Ritz crackers. She uses some Jalapeno mixed in it somehow and it has a great tang, but not to strong. I'll have to try and get her receipe.

They're very easy to freeze and used to keeps lots extra for winter cooking when bell peppers in the store could get a bit pricey!! Especially the sweet red bells at up to $3-4/ lb. Too rich for my blood at that price!!

I must be nuts! With all the preserving jobs already around here to do I went out today and bought 2 big bags of red, yellow and orange peppers. Our local grocery store has the best sale every year on large bags of fresh produce. I got the peppers, big bag of onions and a bag with 3 large cabbage in it. I plan on making cabbage rolls (of course), stuffed peppers, chopped frozen peppers and green tomato/pepper/onion relish. The veg for the relish are already chopped and draining over tonight and tomorrow morning I can cook them up with the spices and vinegar and bottle the relish. I noticed all the wonderful veg juice dripping through the colindar so I've poured it into a jar for the fridge. Won't it make the BEST base for some soup?

Our local grocery store has the best sale every year on large bags of fresh produce.
Wow, you're so lucky. Around here it's cheaper to buy steaks than fresh veggies. It is so darn expensive to eat healthy during the winter. :blink: I guess this is why sneezie is right to about the canning.
The cabbage rolls sound delicious Mary. :mellow: I bet the veggie broth will make great soup..gosh, you're making me so hungry. :mellow:

I made the relish today - it smells wonderful and was done nice and early.
The cabbage rolls: I plan on making about 2/3 of them the regular way with ground beef and rice, etc. but the other 1/3 will be some sort of veggie version, maybe with crumbled or cubed tofu. We've been getting into eating tofu lately because it's good for Jim's gout.
Would you believe my meat & potatoes, logger of a DH actually cooked tofu the other night??? He made a complete vegetarian dinner with baked tofu, brown rice, baked squash/maple syrup and fresh sliced tomatoes. Was it ever good!

He's been suffering from painful gout all summer and finally we just decided to change his diet completely to help control it. Diet is an important tool to fight gout. We eat only about 1/3 of the amount of meat and have cut out a lot of stuff completely from our grocery shopping. Tofu is a good way to get protein and is one of the foods recommended on the gout diet. One day I just bought a block and looked up some recipes on the internet.
He was in such pain that eating tofu seemed the lesser of the 2 evils. As for cooking it, he cooks our supper once a week and there was a block of tofu in the fridge and little else so I handed him a recipe and went to take a nap. It's so easy to cook I have a feeling it's going to become one of his specialties.
As for getting him to cook once a week: years ago I told him it was to his benefit to learn how to cook just in case "something" happened to me. Also I refused to cook at all on Saturday nights so it was go hungry or cook something - the choice was his.

My refuse to cook night is Fridays!!
It's crazy how important the diet is when it comes to an illness. I read the chapter for my blood type in the book "Eat Right For Your Blood Type' and found out that almost everything that I don't like to eat I should be eating -_-

i would make stuffed peppers, that way this winter you will be able to pop them out of the freezer and have a meal, just heat them up!

Gardenlady that's exactly what I have planned to do with most of the peppers. I have all the ingredients and will spend a morning sometime this week cooking the stuffed peppers and freezing them.
Donybee - you cook every night? You sound like my brother, his wife doesn't cook at all. His kids are great cooks though.
