I had some leftover toms and I had made enough of tom sauce for the winter, so I got a tom soup receipe from my brother. About 5lb of toms produced 8 servings. Came out quite tasty for a beginner. Froze the rest and tagged them so not to get mixed-up with the tom sauce I made last week. Used fat-free and low salt chicken broth.

Fresh Tomatoes: 4lbs cored, peeled, quartered or 2-1/2 cans (28 oz ea)
2 cups sweet onions, chopped
1 cup celery chopped
1/3 cup red or green pepper chopped.
4 garlic cloves, minced
2 tsp salt
black pepper to taste (optional)
2 tbsp fresh lemon juice
1 tsp splenda (more if you like it sweeter)
2 cups fresh basil leaves (optional)
parsely to taste
1 tsp oregano, dried
2 bay leafs
5 cups chicken stock or broth

Bring 1 cup of chicken stock to a boil. Add onions, garlic, dried oregano, salt, pepper and cook over medium heat until soft.
Add tomatoes, basil, parsley, peppers, celery, bay leaf, splenda
Reduce heat to low, cover and cook 10 minutes, stirring occasionally
Remove bay leafs
puree mixture in blender
Add remaining 4 cups of chicken stock, lemon juice and cook 10 minutes.
